Our Founder’s Story

CAVA is grounded in the Mediterranean way of life, where food is at the heart of culture and connection. Ike Grigoropoulos, Chef Dimitri Moshovitis, and Ted Xenohristos have known each other since they were six, often goofing off in their Greek church’s Sunday School before heading home for a big Sunday lunch. Picture slow-roasted lamb, lemony potatoes, lots of olives, and bowls of creamy tzatziki—meals where hospitality and generosity ran through their veins.

Growing up as sons of first-generation Greek immigrants, they learned that making room at the table for everyone wasn’t just a tradition—it was a way of life. Later in life, they wanted to share that feeling with everyone. Along with co-founder Brett Schulman, they opened CAVA in 2010 to bring the flavors, warmth, and generosity of the Mediterranean to a fast-casual dining experience.
